I want to make mushroom ravioli?
I'm going to make mushroom ravioli tomorrow, (I'm a twilight fan) and i want to make my filling and let it sit over night button mushrooms, crimini, shallots garlic Parmesan cheese and ricotta i don't particularly care for ricotta i don't like the texture but im hoping that if i let it sit over night it will absorb the mushroom flavor and the flavors of everything else, will this work and if you have any tips for my recipe please share 
It will be fine doing it now and letting it sit overnight.
You don't have to use ricotta - use mozzarella instead.
Just make sure you cover them so they wont dry out.
